David Painter first opened Sush Sushi in downtown Hobart in 2003. Since that time he has expanded with a second retail outlet and a commercial catering offering and has been a long term journey to make his operations as sustainable as possible.

David invested in an eWater System in late 2018 to reduce his chemical use and its associated waste streams. The investment has been well worth it for Sush and he provides his thoughts below -

"Sush exists to make our community a better place. We believe in the power of simplicity. Leadership in health and environment is why we are here. In 2017 we removed plastic from all our packaging. Goodbye to those little soy fish!

Discovering eWater, we saw an opportunity to eliminate a load of plastic and chemicals from our supply chain. We approached e-Water skeptically. It seemed too good to be true, no more chemicals in cleaning - hang on a minute!?

We did our homework, carefully reviewing the science, contacting associates in Japan. We saw enough evidence to make the investment and after 3 months of strict adherence to the eWater system we had our kitchen tested, sending swabs to pathology.

The results have been remarkable. Sush can now produce all the cleaners and disinfectants we need, right in the kitchen, without endless bottles of chemicals, without the hazards, controls and adverse environmental impacts associated with chemicals.

Now the workplace feels different, we are really proud to show customers and other businesses there is a cleaner, safer and ultimately cheaper way to run.
