Charming, Clean and Chemical-Free

Tiny 20 seat Carnation Canteen in Gore Street Fitzroy opened to rave reviews mid 2024.

Dani Valent, Food writer at The Age somehat poetically referred to Carnation Canteen as “...a beacon, glowing in a residential street like a lighthouse of good hope”

Owner and Chef (and trained architect) Audrey Shaw’s experience includes a formative stint working at The River Café in London, famed worldwide for its produce driven cooking.

Carnation Canteen has already achieved an enviable reputation for high quality food, charming atmosphere and excellent service.

With the dream of opening her own restaurant it was only natural that Audrey would seek sustainable alternatives.

Enter eWater… “to reduce the amounts of chemicals used in the kitchen and in the building overall...

In the kitchen we use eWater to disinfect vegetables we receive direct from farms…

We use it to clean oil spills and polish glass… we even use eWater in our vases as it lengthens the life of cut flowers… and for staff its gentle on hands…”

“The machine pays for itself in saved chemical expenses’’

If you’re contemplating eWater Audrey says “It's great! It takes some adjustments …but the advantages of a non-toxic cleaner are truly worth it”
