Flinders University Report | eWater Sanitiser confirmed as an effective alternative

Flinders University Report Overview

Published in October 2019, this Flinders University Report provides an overview of the current evidence supporting the use of electrolysed water as an alternative to conventional sanitisers and supports how eWater Systems meets the requirements of Australia New Zealand Food Standards Code 3.2.2 Division 5 – Cleaning, Sanitising and Maintenance.

The following are extracts of the report commentary:

  • The presented evidence demonstrates that eWater provides an alternative to traditional sanitisers for the disinfection of food preparation surfaces and equipment post-cleaning. It has the added benefit of being user and environmentally friendly and safe for direct contact on fresh produce. In addition to the sanitising solution, eWater also produces an effective cleaning solution with detergent and degreasing properties.

  • eWater sanitiser is an excellent example of the industry driving innovation to provide businesses with an alternative to traditional chemical sanitisers, whilst still meeting the requirements of the Australian and New Zealand Food Standards Code.

What is eWater?

eWater Hygiene Systems use saltwater electrolysis technology to generate commercial grade cleaning and sanitising solution.

The system enables businesses to have their own onsite plant for generating cleaning and sanitising solution, when and where it is needed. Both solutions are non-toxic and do not leave any chemical residue after use, making them incredibly safe and easy to use. This enables a wide variety of applications in a diverse range of industries.

How it works

The science behind eWater® is as simple as the design is elegant. Starting with ordinary tap water, the eWater Hygiene System use a mild salt solution and electrical current to create two streams of electrolysed water—one for cleaning, the other for sanitising.

As an on-demand generation system, production of each solution is initiated as required by passing an electrical charge through an electrolyte. Using positive and negative charge points in the electrolysis cell, a chemical reaction is induced producing eWater in two solutions.

The Cleaner

The negatively charged eWater Cleaner has a pH as high as 11 and consists predominantly of sodium hydroxide (a primary ingredient in many soaps) giving it detergent properties. These active characteristics break down grime and FOG. This solution leaves no chemical residue as it biodegrades and as such makes it a streak free glass, stainless and surface cleaner.

 

The Sanitiser

From the negative charge, naturally forming hypochlorous acid is created. Unlike commercial antibacterial agents, eWater Sanitiser works through an electrochemical process. The microbe’s cellular walls are weakened and then invaded by the eWater sanitising solution which forces the microbe to burst in under 10 seconds. This means it is 80 times faster than household bleach, but safe enough for a child to handle*.
