In Merricks North on the Mornington Peninsula, a smart, sophisticated and luxurious restaurant, cellar door and hotel, The Jackalope, are set to open on the respected Willow Creek Vineyard.
Set to be an absolute exemplar within the region, property developer Louis Li had a vision to create a uniquely crafted experience, proposing “a conceptual approach to art, design, dining, and storytelling delivering a delicate interplay."
The Jackalope Hotel will feature 46 boutique rooms, whilst the adjoining Rare Hare, a casual 100-seater restaurant and cellar door, will showcase products produced onsite. Doot Doot Doot will be a headline contemporary 80-seat restaurant featuring a four-course and eight-course degustation menu.
Two eWater Standalone Systems will be used to clean and sanitise the hotel rooms, back-of-house facilities and the dining spaces.
While The Jackalope won’t be taking guests until the 1st April, the Rare Hare will be serving up deliciously prepared food by Executive Chef, Guy Stanaway.
